Unattractive Banana Muffins 10 January 2010

I love these banana muffins, they are the tastiest (and moistest) muffins that I have ever made without adding tons of oil or butter. But they (bless their cotton socks) are not exactly much to look at. But try them all the same, they are delicious! I currently have a batch sitting in the oven, and the house smells divine.

Banana Muffins

Ingredients:
4 large bananas (see my earlier tip on hoarding and using your old bananas)
100 g white sugar
1 egg
50 g butter (or margarine)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
150 g plain flour

175 C, 20 minutes, makes 12

Method:
– Peel and roughly mash the bananas. Don’t be afraid to leave some lumps, as this will add to the muffin delight later on. I used a few lady fingers in there, too, this time, because I had them at hand, and because they have a firmer flesh. Don’t use too many, though, as their flavour might be too powerful the muffins.
– Gently beat the egg to break the yolk and add it to the bananas.
– Melt the butter, and add the sugar and butter to the banana mix.
– In a separate bowl, combine the dry ingredients. Sift these into the banana mixture, and gently fold through until combined. Spoon the mixture into a greased muffin tin, and bake.

– To play around with the recipe, you can add cinnamon, chopped nuts or chocolate chips to the batter before spooning it into the muffin tin.

Frozen Bananas 10 August 2009

Speaking of frozen bananas, when we used to go for drives along the Northern New South Wales coast to get to Byron Bay, we used to always stop by an organic fruit store, whose name, I am afraid, escapes me.

Not because I have an affinity for organic fruit, but because they made banana popsicles. Luckily, I can now make them myself, with the help of our friends over at Good Life Eats. So can you!
